On April 9th, 2020, the world evolved. The entire globe halted to a complete stop as we gawked at our illuminated screens displaying an ooey-gooey photo of DoubleTree Hotels' famous cookies. But, that was not the only thing that made us stop in our tracts; it was their very own recipe for that same ooey-gooey deeply praised cookie which made time standstill. Now, you may be thinking, *she's being soooo overdramatic, it's just a cookie. * Therefore, if you are thinking that this just means you have never gotten the life-changing chance to indulge in a DoubleTree Hotels' cookie because if you have, that judgment would have NEVER crossed your mind. But don't fret, I am here to finally present to you a taste of that opportunity which you have been so sadly deprived of.
Now that I have your attention, what do you say I take you step by step to making these cookies a perfect cookie dough ball packed with chocolate chips and walnuts into a warm golden brown moist cookie? Yes, I agree, let's go!
Your very first step for making these cookies amazing is to pulse your oats in a food processor until they become fine.
Pour your oats into a large bowl. In that same bowl add in your measured flour, salt, cinnamon, and baking soda and combine these ingredients together with a rubber spatula or whatever tool you prefer.
In a separate bowl, cream your butter and both sugars together with a handheld mixer or electric mixer fitted with a paddle.
Note: do not overmix!
Next, add in your eggs, lemon juice, and vanilla.
Combine until the texture is smooth.
Add your flour mixture into the batter and mix together slowly until just combined.
Add in your chocolate chips and walnuts and mix until just combined.
Use an ice cream scooper or a tablespoon and a half to scoop the dough onto a baking pan covered in parchment paper. Place your dishes in either the freezer or refrigerator. I like to portion out my dough before popping it in the freezer so it takes up less time trying to scoop out rock hard dough. Chilling the cookie dough is a must since it allows for the ingredients to come as one and prevents them from spreading while baking. You may chill your cookie dough as long as 48 hours or as little as 1-2 hours; whatever your heart desires! I placed mine in the freezer for 2 hours because there is no way I can wait that long to eat these cookies!
