No...? Maybe I'm watching too many adventure movies. Anyway, these Peanut Butter Hi-Hat Cupcakes are just like a treasure chest. There is a hard chocolate shell covering the magical soft peanut butter frosting all the while sitting atop a perfectly fluffy and moist vanilla cupcake! These cupcakes may just be better than any treasure.
Now I know some of you may be looking at these cupcakes and are already backing out before starting but allow me to settle your fears, these Peanut Butter Hi-Hat Cupcakes are not difficult at all. As long as you follow the steps listed below and use the correct equipment you will be enjoying your homemade Peanut Butter Hi-Hat Cupcakes in no time!
What exactly is a hi-hat cupcake?
Usually, hi-hat cupcakes consist of a marshmallow frosting that is covered by a hard chocolate shell all sitting on top of a chocolate cupcake. Now don't get me wrong the traditional hi-hat cupcakes sound delicious right? Right. But... why not change the game a little? Peanut butter is drop-dead delicious on any cupcake especially ones coated in chocolate so why wouldn't I do it?!
How do you make these cupcakes?
There are three simple parts to these Peanut Butter Hi-Hat Cupcakes...
- Vanilla Cupcakes
- Peanut Butter Frosting
- Chocolate Shell
Part 2: Peanut Butter Frosting. You will want to begin making this after your cupcakes have cooled. Whisk together egg whites and sugar constantly in a heat-proof bowl set on top of a pot of simmering water. Once these ingredients are heated, begin whipping them together. Now, beat in 10 tablespoons of softened butter at a time and creamy peanut butter.
Pipe the frosting on the cooled cupcake with any type of piping tip. I like to use a 1/2 round #12 piping tip.
Once all of your cupcakes are frosted, place them in the freezer or refrigerator so the frosting can set. Now onto the final step...
Part 3: Chocolate Shell. This is probably the easiest step because it only requires two ingredients! Melt 10 ounces of baking chocolate together with 1 1/2 of vegetable or canola oil.
I recommend melting these ingredients together in a medium-sized deep bowl so dipping your cupcakes will be easier. Let the melted chocolate cool for a few minutes to make sure the hot chocolate will not melt the frosting.
Remove your cupcakes from the freezer or refrigerator and let's get dunking!
After all of your cupcakes are dunked refrigerate them again for 30 minutes to set the chocolate shell. Longest 30 minutes of my life! After that, enjoy!!!
